Beef Onion Soup Recipe

Ingredients

( for 4 people )

2 tablespoons extra virgin olive oil (plus a spoonful of extra olive oil for serving)
250 g beef
5 large onions, diced
20 shallots
2 red peppers, diced
3 garlic cloves, chopped
4 large tomatoes, peeled and roughly chopped
2 teaspoons tomato puree
2-3 sprigs of thyme
450 ml vegetable stock
800 ml cold water

Preparation

Heat 1 teaspoon of oil in a large saucepan, cook the beef until it turns a little color. Place it on a plate and let it sit, while adding the rest of the oil to the pot. Fry over medium heat for about 10 minutes, adding large size and shallots, paprika and garlic. When the onions turn golden, add the tomatoes and tomato puree, cook for another 2 minutes, raising the heat. Add the thyme sprigs, vegetable stock and 800 ml of cold water to it. Season the mixture with a little freshly ground black pepper. Add the beef to the pot and cook for 15 minutes. Serve hot.
