Cheese Souffle Recipe

  • 2 teaspoons İçim Butter
  • 4 tablespoons İçim White Cheese
  • 21/2 tbsp flour
  • A pinch of ground red pepper
  • ¼ teaspoon powdered nutmeg
  • ¼ teaspoon freshly ground black pepper
  • Half a glass of İçim Milk
  • 2 tablespoons white grape vinegar
  • A pinch of sea salt
  • 50 gr İçim Kashar Cheese
  • 2 egg yolks
  • 4 egg whites

This recipe is for a single large soufflé dish. If you wish, you can prepare each one as per the recipe and bake it in small ovenware.


Preheat the oven to 200°C. After thoroughly oiling the large soufflé bowl with İçim Butter, sprinkle grated İçim White Cheese on it. Spread the cheese by shaking the bowl with your hand to cover the entire surface. Start by stirring the flour, red pepper powder, black pepper and nutmeg in a small saucepan over medium heat. Slowly add İçim Milk and vinegar. Mix well with a whisk. Continue cooking, stirring regularly, until the mixture thickens, about 5 minutes. After removing it from the stove, add the grated İçim Kashar Cheese and salt and stir until the cheese melts. Transfer the mixture to a large bowl and let it cool for 5 minutes. Then add the egg yolks and mix well. Place the egg whites in a large bowl and beat them in the mixer on high speed until moderately foamy. Mix a quarter of the resulting foam thoroughly into the egg yolk mixture. Add the remaining egg white to the mixture by slowly pouring it from bottom to top. Slowly pour the mixture into the soufflé dish (or cups) using a spoon. After placing the bowl on a tray, place it in the oven. After reducing the oven temperature to 185°C, bake for 16 minutes.
