5 potatoes, peeled and grated
1 teaspoon salt
A pinch of freshly ground black pepper
5 tablespoons olive oil
250 gr İçim String Cheese
1 bunch of spring onions
Wash the grated potatoes in cold water until the starch is completely gone. Drain and dry thoroughly.
Finely chop the spring onions, including the white parts. Season the potatoes with salt and pepper in a large bowl. Heat 3 tablespoons of olive oil in a large, deep frying pan. Add half the potatoes to the pan.
Press gently until it covers the entire surface. Spread the white part of the spring onions and the grated İçim Kashar Cheese over the potatoes and cover it with the remaining potatoes. Press gently again. Continue cooking over medium heat until the bottom and edges turn golden. This process will take approximately 15 minutes.
Place a plate on top of the pie, invert the pan and place the pie on the plate. Pour the remaining olive oil. Place the pie back into the pan, this time on the other side. Continue baking for about 10-15 more minutes so that the top browns the same way as the bottom.
Serve by decorating with green parts of finely chopped spring onions.
