Vegetable Meatballs Recipe

Ingredients

( for 4 people )

500 g potatoes
350g pumpkin kernels, sliced
300 g broccoli
2 eggs
1 large leek
2 tbsp İçim Kashar Cheese
Extra virgin olive oil
Salt, black pepper

Preparation

Arrange the pumpkin slices on baking paper, salt. Bake in the oven at 200 degrees for 30 minutes, covering the paper tightly. Cut the florets of the broccoli into small pieces and boil them in boiling salted water to a slightly fresh consistency. Boil the potatoes and leeks in separate bowls as well. Peel and mash the potatoes. Cut the pumpkin into pieces. Put the mashed potatoes in a bowl and mix them with the pumpkin and broccoli. Mix well with eggs, 2 tablespoons of olive oil, 2 tablespoons of grated İçim Kashar Cheese, a pinch of black pepper.

Form a rectangle of leek shells on a wide sheet of wax paper. Roll the vegetable mixture into a roll and place it on top of the rectangle you made from leeks. Cover the vegetable mixture with the leek peels and wrap it in a roll with the help of baking paper. After sealing the paper like candy at the ends, wrap it in cling film to make it tighter.

Bake in a fan oven at 200 degrees on a baking sheet for 1 hour and 10 minutes. Take it out of the oven and let it rest for a few minutes. Unwrap the foil and paper and slice them.
