Italian Style Oven Chicken Recipe

2 small chickens
1 onion, cut in half
1 green apple

for brine
50g salt
1 sprig thyme
2 cloves of garlic
70 ml balsamic vinegar
1 tablespoon of black pepper
2 liters of water

for Italian sauce
1 tablespoon fresh rosemary
2 tablespoons lemon thyme
¼ bunch parsley, chopped
1 lemon, peel grated
4 tablespoons İçim Butter, at room temperature


Boil all the ingredients for the brine with 2 liters of water over medium heat. Remove from the stove and let it cool.

Mix all the ingredients for the Italian dressing in a bowl. Flavour with salt and blackpepper. After washing the chicken under cold water and drying it, place it in a large pot. Pour the Mediterranean brine over it. Cover them with stretch film and leave them in the refrigerator overnight.

Before cooking, preheat the oven to 190ºC. Wash the chicken again with cold water and dry thoroughly. Fill it with chopped onion and green apple.

Mix all the ingredients for the Italian sauce in a bowl and ensure that it becomes completely homogeneous. Apply the mixture to the chicken and bake in the preheated oven for 15 minutes. Reduce the oven temperature to 180ºC and bake for a further 45 minutes.

After taking it out of the oven, cover it, let it rest for 10 minutes and serve.
