2 tbsp İçim Butter
3 garlic cloves, chopped
2 hot red peppers, seeds removed and chopped
2 onions, thinly sliced in half rings
450 g scallops
1 tablespoon fish sauce
¼ tablespoon sugar
½ tablespoon ground black pepper
200g basil leaves, roughly chopped
Heat the herb butter in a large wok. When the oil is hot, sauté the garlic and chopped red peppers for about 30 seconds. Add onions and sauté for 1 more minute. Add the scallops. Cook for 1-2 minutes until the surfaces turn golden brown. Add fish sauce. Season with sugar and black pepper. Continue cooking on high heat for 1 more minute.
Add basil leaves and serve while hot.
You can use scallop shells for an elegant presentation.
