3 tbsp İçim Butter
1 onion, diced
1 red pepper, seeds removed, finely chopped
300 g spinach, chopped
200g potatoes, boiled and sliced
Salt and pepper
8 eggs, lightly beaten
80 gr İçim Halloumi Cheese
Heat the İçim Butter in a large pan. Add onion and pepper and cook for 6 minutes, stirring in between. When it softens, add the spinach and potatoes. Season with salt and pepper.
Preheat the oven to 180 degrees. Break the eggs into the pan. Gently mix with spinach and potatoes and distribute evenly in the pan. Sprinkle grated İçim Halloumi Cheese on top.
Lower the heat and cook for about 7 minutes, moving it under with a spatula. Remove the pan from the stove and place it in the oven for 1-2 minutes until golden brown. Slice the omelette and serve hot.
