Strawberry Flan Recipe

For the tart dough
300 g flour
100 gr İçim Butter
100 g icing sugar
50 ml İçim Süt
3 egg yolks
Lemon zest

For the filling
40 gr İçim Butter
250g strawberries, diced
120 g granulated sugar
70 g almond flour
50 ml İçim Chief Cream
3 egg yolks
1/2 vanilla pod, cut in half
1 teaspoon of lemon zest


To prepare the tart dough, knead the flour and İçim Butter in a bowl. Add the lemon zest, powdered sugar, milk, a pinch of salt and egg yolks. Continue kneading. Turn the dough into meringues, wrap it in cling film and let it rest in the refrigerator for 30 minutes. Chop the strawberries into small pieces. In a large frying pan, heat the İçim Butter. Add the vanilla pod and strawberries and cook for 2 minutes. Add granulated sugar and cook, stirring, for another 1 minute. Remove to another bowl and remove the vanilla pod from it. Place the tart dough on a flat surface. Roll it out with a rolling pin and place the dough you rolled out into the tart mold by pressing well with your hands. Make holes in the base of the dough with a fork. Put baking paper on top of the dough and leave dried legumes on top to weigh it down. Place the tart pan in the lower part of the oven and bake for 12 minutes at 180 degrees.

Add the egg yolks, İçim Chef Cream and almond flour to the strawberries and mix with a spatula. Take your tart out of the oven and remove the paper and legumes. Pour the strawberry mixture into the tart dough, put it back in the oven and bake in the oven at 200 degrees for 35 minutes. If the dough is too browned, cover the tart with another tray. After taking it out of the oven, let it rest for 8 minutes and serve.
