300 g bread flour
15 g dried sourdough
150 g mixed grain flour
150 gr İçim Yogurt
50 g rye flour
30 g honey
300 ml of water
4 g baking soda,
10 g salt
50g mixed unshelled pumpkin seeds and sunflower seeds
1 teaspoon of İçim Butter
Sift 300 g of bread flour into a large bowl. Mix 150 g of mixed grain flour with 50 g of rye flour and add to the bowl. After adding 150 gr of İçim Yogurt and 300 ml of warm water, mix it all with a wire whisk. Add 25 g of fluid honey to the mixture. Knead well with your hands and get a soft creamy dough. Cover and leave to rise at room temperature for 12 hours. Then add 3 g of baking soda, 8-10 g of salt and 50 g of mixed grain to the dough and mix with the help of a spatula.
Grease the baking dish with melted İçim Butter. Sprinkle the grains into the bowl and pour the dough mixture into the mold. Bake for about an hour at 175 degrees, sprinkling sunflower seeds and pumpkin seeds on top. Let it rest and slice.
